Chocolate bars and powered cocoa mixes are a fundamental part of our experience of chocolate today, but until the industrial revolution made large scale emulisification possible, most chocolate in Europe and its colonies was consumed as a beverage by the wealthy. One could not use a tea service to serve hot chocolate, of course; neither would a coffee service do. Chocolate must be served from a chocolate pot! (Source)
